Kiwi Mussel Fritters

 

Ingredients:
• 800g Ikana Live Greenshell™ Mussels
• 6 eggs
• 1 cup self-raising flour
• 1 tbsp sweet chilli sauce
• 100g feta cheese
• Small bunch coriander

Method:

• Place Ikana Live Greenshell ™ Mussels in pot with a small amount of water plus the juice from the pack.

• Bring to boil and steam the mussels open. Shake the pot to assist opening.
Remove mussels from their shells and chop into small pieces.

• Beat eggs, add flour, chilli sauce, feta cheese and coriander and mix to form a smooth batter.  Add the chopped Ikana Mussels and mix in.

Place large spoonful in heated pan and cook on each side until brown and cooked through. Great on the BBQ, too!
