The Paleo diet is not meant to be a punishment and deprivation of all your favorite tasty treats such as bread and cinnamon rolls. In fact, it includes countless delicious foods such as chicken, beef, fish, eggs, vegetables, and fruit along with healthy oils and nuts. You might not be able to indulge in a honey-glazed cruller when eating Paleo, but you certainly do not have to give up tempting baked products and breads forever.

Chia Paleo Bread
Chia seeds are smaller than sesame seeds and have a very mild flavor, which combines well with other ingredients. They are a wonderful source of omega-3 fatty acids and fiber and have been linked to lowering cholesterol, stabilizing blood sugar, and boosting energy. This recipe makes a small loaf, but it will pack a powerful nutritional punch, especially if you have a couple slices for breakfast.

• 11⁄2 cups almond flour
• 1⁄2 cup coconut flour
• 1⁄4 cup ground chia seeds
• 1⁄2 teaspoon baking soda
• 1⁄4 teaspoon sea salt
• 5 large eggs
• 4 tablespoons
• 1 tablespoon apple

1. Preheat oven to 350 degrees F and lightly grease an 8 x 4-inch loaf pan.
2. In a large bowl, stir together the almond flour, coconut flour, chia seeds, baking soda, and salt until well combined.
3. In a small bowl, whisk together the eggs, coconut oil, and apple cider vinegar.
4. Add the wet ingredients to the dry ingredients and stir until incorporated completely.
5. Spoon into loaf pan and smooth the top.
6. Bake for 40–50 minutes, until a knife inserted in the center comes out clean.
7. Let the loaf cool for 10 minutes. Then turn it out onto a wire rack until completely cool.

Makes 1 small loaf (4–6 slices).
