Roast Pumpkin, Yoplait Greek Yoghurt and Chorizo Dip
Serves: 4-6
Preparation Time: 30 minutes
Cooking Time: 40 minutes
Ingredients:
750g pumpkin, peeled and cut into small chunks
olive oil, to drizzle
2 (230g) chorizo sausages, sliced
160g Yoplait Greek Style Natural Yogurt
1/2 teaspoon cayenne pepper, optional
flat leaf parsley and pita chips, to serve (optional)
Method:
1. Place pumpkin on a baking tray, drizzle with a little olive oil and season with salt and pepper. Roast at 180⁰C for 30-40 minutes or until tender.
2. Panfry chorizo in a dry frypan until lightly browned and cooked through. Reserve 6-8 slices for garnish.
3. Place chorizo in a food processor (or use a stab blender) and blend until smooth. Remove and set aside. Process pumpkin until smooth. Return chorizo to processor and blend with half of the yogurt and cayenne pepper until just combined. Season to taste with salt and pepper.
4. Spoon dip into a serving bowl and top with Yoplait Greek Yogurt, chorizo slices and parsley. Serve with pita chips.
Tip:
Chorizo sausages are available in the deli section of your supermarket.
Summer Berry Cups
Makes 4
Preparation Time: 10 minutes
Ingredients:
1 1/2 cups Yoplait Greek Style Yogurt
2/3 cup lemon curd
8 butternut snap biscuits, chopped
2 cups fresh or frozen mixed berries
extra fresh berries, to serve
Method:
1. Combine yogurt and lemon curd together in a small bowl.
2. Evenly place half of the chopped biscuits into the base of four serving glasses or bowls (3/4 cup capacity). Top evenly with half of the berries followed by half of the yogurt mixture. Repeat layers.
3. Serve immediately topped with extra fresh berries.
Notes:
Lemon curd or butter is available in the spreads section of the supermarket. If lemon curd is unavailable, substitute with 1 tablespoon icing sugar.
You can also use chocolate ripple, sponge finger, shortbread or ANZAC biscuits if you prefer.
The Only Smoothie Recipe You’ll Ever Need
Makes 2
Preparation Time: 10 minutes
Ingredients:
Base:
200g of Yoplait Greek Natural Yogurt
1/2 cup milk
handful of ice cubes
Variations:
Banana, Cinnamon and Honey
1 banana, chopped
1 tablespoon honey
1/2 teaspoon cinnamon
Mixed Berry Smoothie
1 cup frozen or fresh mixed berries
1 tablespoon honey
Mango Smoothie
1 cup frozen or fresh mango pieces
1 tablespoon honey or maple syrup
Method:
1. Process all base ingredients plus your variation of choice in a blender until smooth and creamy.
2. Pour into chilled glass and serve ice cold.
Notes:
Substitute honey with maple syrup, icing sugar or brown sugar if you like a sweeter smoothie. Add extras to these basic smoothies such as grated lime rind, vanilla essence, cocoa powder, almond meal or chia seeds for extra goodness!
