Lemon sole - the fashionable food to serve this June

Like clothing-fashion, food-fashion also reinvents itself - bringing back our 'vintage' favourites and reinvigorating them for another turn under the spotlight. The seafood species due for resurgence this June is the delicate and impressive lemon sole, part of the flatfish family.

n the 70s, the 'it' seafood dish in many restaurants was a flatfish meal, using a species such as lemon sole, where the fish was cooked and served whole.

This month's Fish of the Month, lemon sole, is making a comeback on to New Zealand plates in a wonderfully healthy way. June's elegant yet simple feature recipe sees the flatfish served as "Whole grilled lemon sole with garlic, herbs and chilli."

Feeling flat? Eat lemon sole! Eating flatfish such as lemon sole is a great way to help keep from feeling tired, as it is a good source of vitamin B12, a nutrient known to contribute to the reduction of tiredness and fatigue.

Lemon sole is one of the most delicious flatfish species in New Zealand. Other New Zealand varieties such as flounder are also readily available. Flatfish are not too dissimilar in terms of flavour or nutrition value, meaning they can be swapped out for one another in recipes, depending on local availability.

While lemon sole is caught mainly in the South Island, it is available for purchase nationwide, and moderately priced with the added bonus of minimal food waste due to the ability to cook it whole.
